About the Author
Charles Phan is the executive chef and owner of The Slanted Door family of restaurants, and the author of IACP award-winning book, Vietnamese Home Cooking (2012). He received the James Beard Award for Best Chef California in 2004, and in 2011, was inducted into the James Beard Foundation’s Who’s Who of Food in America. Typical Charles Phan; so similar, yet so different from his first book

A cross between rustic, familiar, and sophisticated.

Be forewarned: I find most of the recipes in this book irresistible. In this review I couldn't help but mention many of them.(So sorry. But, you know, when you've had enough, you can stop reading....)

When I heard Charles Phan was writing another book, I could hardly wait to get my hands on it. I love his book "Vietnamese Home Cooking" and use its recipes often. That book was a wealth of information and creative ideas. It's well-written and has great photography. I anticipated that this new book would be even more impressive--in all ways. I am happy to say that it has superseded my expectations!

As one would expect from Charles Phan, this cookbook is down to earth and well-enough suited for a home kitchen: Most recipes are approachable. The ingredients are easy to find (if you can get yourself to an Asian market, and have access to fresh vegetables, greens and fish). In this second book, the finished dishes might look prettier on the plate, and a little less rustic than those in his "Home Cooking" book, and some ingredient lists a bit longer. But, I don't think these recipes are any more complicated. In fact, many are short and sophisticated; pairing fewer ingredients with great success.

Yes, it is--what I call--a restaurant cookbook, written by a popular restaurant chef. I usually try to avoid those because they tend to be very "full of themselves". I'm glad my experience with Phan's first book pushed me to give this one a try. Often "restaurant cookbooks" are way too self-serving, boastful and prideful, almost righteous-sounding: Containing complicated recipes using hard-to-find and/or expensive ingredients, needing too many pots and pans, and labor intensive from prep work to clean up. Not this book: Somehow, it comes off as a humble offering of wonderful recipes and helpful information. I like and appreciate that.

Pictures in this book are beautiful and plentiful. Page layout is easy on the eyes. Ingredient lists are easier to read than in his first book. Instructions are straightforward and easy to follow and play alongside the ingredient lists. The recipes are divided into unique chapters that incorporate the history of his Slanted Door restaurant as it moved from its humble beginnings to larger quarters. (Check out the "Look Inside" feature on this product page to see the Contents page.) So, besides being crammed with recipes from The Slanted Door, the book also tells the very interesting story of Charles Phan and his evolution into a highly regarded chef with highly regarded and popular restaurants. As he tells his story, he pays special tribute to his family, co-workers, purveyors, and more, without whose help he would not be where he is today.

There are very few--maybe just one, actually--repeated recipes from the first book. Pork and Shrimp Spring Rolls is back in this book, but maybe just in honor of this recipe that gave inspiration for Phan's Slanted Door; (In this book there is also a vegetarian spring roll recipe). For instance, the Pork and Shrimp Wonton filling has different ingredients in each book. (The recipe in this book is even easier. After reading the recipe, one can't help but make them right away.) You will find the same main ingredients in many recipes, but prepared with different flavors; the same techniques used with different proteins and vegetables, different sauces. I guess what I'm trying to say is that the recipes in this second book look and sound familiar, but upon second glance, they are totally different. But you can recognize the Charles Phan in every one.

Besides stories about the restaurants, there are also essays on other topics like tea and wine.

Other cooks may love this book for its wealth of recipes that can be saved up for a slow, leisurely, day-off from work, a trip to several markets, and a day-in the kitchen, building flavor upon flavor until it all comes together as a whole (some of the soups, stews, spring and Imperial rolls fall into this category).

But, what I love about his books is discovering "gems" of recipes that are heavy on flavor and light on time spent in the kitchen. (When Gulf shrimp are in season, I make his Simple Grilled Shrimp once or twice a week. It's in his first book, and if you don't have a copy, you really need to buy it, too.) Here are some recipes in this second book--that I found easy to make and wonderful to eat--and I fully expect them to become worthy "keepers", too:

--Clams with Butter-Lime Sauce; with onion, garlic, wine, fish sauce: Hot spicy, tangy, salty, and luscious.

--Beef Carpaccio, made with pounded-out top round, instead of filet, and a spicy tuna tartare.

--Vietnamese Sausage, made with pork belly, logs wrapped in banana leaves, plastic wrap and foil, then steamed.

--Halibut and Scallop Ceviche

--Boiled Shrimp with Spicy Cocktail Sauce and Thai Basil Aioli

--Vietnamese Chicken Salad, with ginger, scallions, cabbage, rau ram leaves, flavored fish sauce and rice vermicelli. Just the technique of cooking/poaching the whole chicken is a "gem".

--The Spicy Lemongrass Soup is a heavenly broth created from shrimp heads and shells, fish carcasses and aromatics, topped off with quickly cooked shrimp and bean sprouts.

--An oh-so-good simple Jicama and Grapefruit Salad

--I love the Spicy Squid Salad with Chinese Celery, with a tangy, sweet, and salty dressing over briefly boiled squid rings, Thai basil, onion and cucumber.

--Fermented Tofu Dipping Sauce and Egg Fish Sauce for steamed veggies.

--Worth the price of the book, this recipe: Vietnamese Quiche: Crustless, made with cellophane noodles, mushrooms, ground pork, crab, and more. Steamed. There is more to it, but I'm not going to tell....

--I love simple perfectly poached chicken. So I love Hainan Chicken. It, also, is worth the price of the book to me.

Do I dare keep going? Braised Ginger Chicken, Roasted Crab, Roasted Lobster, Fried Chicken (yes), Caramelized Chicken Claypot, Steamed Halibut with Ginger Lime Broth, Steamed Black Cod in Banana Leaf, (I love steamed fish and the broth is lovely), Steamed Spare Ribs, Steamed Chicken with Black Bean Sauce.

Other interesting recipes:

--Crispy Rice Cakes made in a Danish ebelskiver pan.

--Shrimp paste formed around sugar cane sticks and grilled.

--The whole chapter on cocktails is interesting. (What? Do all restaurant cookbooks have a "spirited" chapter now?) But many do call for some ingredients that would have to be special-ordered in my area. They sure are beautiful to look at, though....

--The recipe for The Slanted Door's "Shaking Beef" is in this book.

--Wish I could get fresh sardines. I would love to make the Sardine Claypot. It looks soooo good.

--What to do with king trumpet mushrooms? Stir-fry with fresh corn.

Desserts: They are simple offerings: Strawberry or Coconut-Lime sorbet, No-Bake Cheesecake with a special crust, Coconut Tapioca, The Slanted Door's Chocolate Souffle Cake, Vietnamese Chocolate Tres Leches Cake (a real winner if you have time), and more.

**I received a temporary download from the publisher to review this cookbook by Charles Phan--and I am so glad they allowed me to see it ahead of time. I have been working with it for several months while the final copy was prepared for publication. This is a book I will purchase in the near future--can't live without it! Got to have it, now that it has been released to the public. EDIT: I purchased this book from Amazon and you can see the "Verified Purchase" tag at the top of my review.

Incredibly beautiful cookbook that combines the history of Charles Phan's restaurant with recipes he's used in house. Many recipes are traditional Vietnamese recipes with a modern twist.

Wonderful Holiday Book!!

The Biggest series is super adorable I love them and so do my 5 children, I like to read how the 2 little mice always seem to work out the problem in the end of each story. The illustrations are wonderful so are the length of the books. Some books now can look small but be jammed with words. Being over wordy in a children's book is not good. These books are not too wordy they give details, spike your attention every page. The Biggest Christmas Tree Ever by Steve Kroll is great for children 3 and up. We recommend you put them on your Christmas list!

Simple and entertaining

This is almost a version of city mouse country mouse, except these two friends from different families, come together and work together to make everyone happy. I liked the way the two main characters have their story told, side by side, allowing children to see the clear similarities. A nice story which became a fast favourite with the kids (3yrs & 6yrs).

A definite improvement over Genes VI

In this edition, the author dramatically departs from the last one, both in content and order of presentation, and in the author's enthusiasm. He is clearly very excited about the developments in genetics that have taken place in the last decade, and this shows up everywhere in his writing. The book would be of interest to anyone interested in genetics, whether they are students, curious laymen, or mathematicians or physicists interested in the molecular biology behind genetics. The only minus to the book is the lack of exercises, the absence of which makes the understanding of the material more time consuming. A good background in biochemistry would be very helpful in the reading of the book.
The book is a sizable one, and space does not permit a detailed review, but there are some areas in the book that stand out as being exceptionally well-written, thought-provoking, or helpful. As someone interested in bioinformatics, mathematical genetics, and mathematical modeling of metabolic processes, I read this book from the standpoint of these interests. With this in mind, some of the more interesting discussions in the book include: 1. The author constantly asks questions throughout the book, which help to clarify the issues and motivate the concepts in the book. He also points out the questions that are unanswered up to the date of publication, giving the research-oriented reader opportunities for further investigation. 2. The discussion on mutations, with the author pointing out the difference between point mutations and insertions/deletions, the role of revertants, and the occurrence of silent mutations. I wish he would have elaborated in more detail on the experiments that identified the mutations responsible for Mendel's famous wrinkled-pea mutants, i.e. the inactivation of the gene for a starch branching enzyme. 3. The discussion on the C-value paradox and the presence of large amounts of noncoding DNA in the larger genomes. This is an interesting problem for optimization theory. 4. The discussion on the mechanisms for gene reorganization. Again, this is an interesting question in optimization theory, especially the divergence between introns as a stabilizing factor that suppresses the occurrence of unequal crossing-over. The author gives examples of the effects of unequal crossing-over, such as human globin gene clusters. 5. The crossover fixation model and the time scales needed relative to mutation. 6. Satellite DNAs and their role in DNA fingerprinting. From an information theory standpoint, satellite DNAs are interesting since they are essentially long strings of DNA of low complexity. 7. The life cycle of mRNA and the neat electron micrograph illustrating beautifully the dynamics of gene expression. 8. The accuracy of translation; the author outlining the critical stages at which errors can be made. 9. The discussion on phage strategies. The dynamics of phages is very amenable to mathematical modeling. 10. They topological manipulation of DNA. Some results from the mathematical theory of knots, such as the writhing and twisting numbers, are playing a role here. 11. The discussion on transposons. The author speaks of the mobility of transposons, and the physical mechanisms employed for their transfer are elaborated on in detail. The theory of transposons has to rank as one of the most fascinating in all of genetics. 12. DNA rearrangements and their consequence, such as the creation of new genes and the switching of expression of one gene to another. The discussion on Crown gall disease is particularly interesting. 13. The discussion on the visualization of genes during transcription and the differences in the experimental results. 14. The regulation of transcription and the control mechanisms for eukaryotes. 15. RNA editing and how information is extracted from various sources. 16. The discussion on the development process in Drosophila. This chapter should begin to satisfy the reader who is curious about the molecular basis of development.
Because of its high quality, this book will no doubt continue to be one of the canonical texts in genetics to be used now and in the future to prepare students and researchers in genetics. The career opportunities opening up in bioinformatics and genetic engineering have mushroomed in recent years, a lot of this driven by the needs of drug discovery and development. In this connection, the author asks the following question in the book: "If we could read out the entire sequence of DNA comprising the genome of some organism and interpret it in terms of proteins and regulatory regions, could we then construct an organism by controlled expression of the proper genes?" One can only hope that the answer to this question will be yes, as this will create one of the most exciting of all professions in the 21st century: the genetic designer.

Thumbs down from a frustrated professor

Lewin's Genes series has dominated the market in Molecular Biology textbooks ... Unfortunately, its monopoly status seems to have insulated Lewin, his illustrators, and his editors from the corrective influences of a competitive market...so far.
I am in my second year of teaching from this book and I find it very frustrating. Lewin's writing style is unclear, difficult and distracting. Tangential ideas and subjects appear out of nowhere in the middle of chapters for no logical reason. As I write this, I should be preparing my lecture for Chapter 26 (Signal transduction). Why does this chapter start with a discussion of transporters? Later parts contain sentences that are almost unreadable and way too much detail about the alphabet soup of different kinases.
Although it is much better than some earlier editions, Genes VII still contains a variety of major and minor errors, including serious problems in explaining how lagging strand DNA synthesis is coordinated in the replication fork - several experts tell me that the model in figure 13.16 is simply wrong. The holoenyme does not lose one of its catalytic subunits with each cycle of Okazaki fragment synthesis. The clamp simply lets go and the clamp loader grabs the next fragment with a new clamp. I realized this semester that I had been ignoring the book and teaching what I knew from seminars.
Even when the content they describe is basically correct, figures in Genes VII can be astonishingly bad. Homologous recombination is illustrated with DNA strands that are only color coded and where the 5' and 3' ends are not labeled (Chapter 14). Unlabeled spliceosomal proteins change their color codes in the middle of the pathway - transesterification to form the lariat also seems to change U2 into U1 (Figure 22.10).
I am hoping that one of the newer competitors for Genes VII will prove to be a suitable replacement. I am examining Robert Weaver's Molecular Biology - I like what I've read so far - and should get a review copy of T.A. Brown's Genomes soon. ...Disclaimer - I have no financial interest in the success of any of these. All of them are available on Amazon.
By the way, I do have a Ph.D. in Molecular Biology. I'm not an expert in all of the material covered by Genes VII, but I was trained in labs whose work is cited in Genes VII.

Drawing helps

This was one of several drawing books I considered as support material for a beginning drawing class I was recently called on to teach at a local state university. So much of drawing becomes intuitive after several years, that a good text by another instructor can bring those second-nature drawing decisions to the surface for both self-examination, and instructive help for the student. Though there is another book being used for the class, I found the excellent mix of contemporary and old master drawings throughout this volume to be especially nice for examples to students, and the exercises clear and useful.

I had not realized how long ago this was published, but recognized some of the exercises from my own studies from a few years ago, not knowing they were from this particular book. How many ways can you teach drawing? There are many variations, but most revolve around leading the student to trust their eyes and draw what they really see, and there are many such encouraging exercises in "Experimental Drawing", as well as a variety of techniques for manipulating the drawing media and constructing interesting compositions. I would not consider this a complete drawing course by any means, but it offers a variety of possible explorations that greatly benefit the study of the foundation of art -- drawing.

I love the book. I am a professional artist and I want to explore more in experimental drawing. This is the book to have, it proposes lots of different exercises and challenges to improve your skills and try out new forms of expression. I would not suggest it for a beginner though.

Scholarship meets practicality

Did you ever wonder how your kitchen became what it is today? No matter what style or period it is, this book will help you to understand your kitchen better. It may leave you delighted with what you have or imagining how it could be improved. It may also leave you thrilled with the character of an old kitchen and willing to put up with its impracticality in order to maintain the integrity of your house. Everybody has a relationship of one sort or another with a kitchen. For most of us, it's intimate and occurs multiple times on a daily basis. In this book, Nancy Hiller will introduce you to your kitchen's past and its development with well-written, intelligent prose and excellent illustrations. This is a book to read, to share and to keep.

Just couldn't enjoy this writer.

I ordered this book in hopes of acquiring more information on Seller's Hoosier cabinets. While this book is informative I just couldn't get into Ms. Hiller's style of writing. I finally just looked up the pages that referred to the Seller's cabinet and read those and looked at the photos. It does offer lots of insight into the lives of families at the time of the Hoosier heyday, it was not what I was looking for as far as brand information. It is a nicely presented hardback book but with few color photos.

The last time I purchased the "Merck Index", in addition to the one-year on-line access there was a computer disk included that permitted one also to print monographs from the computer. That was omitted in this edition.
